Film is a great way to communicate, it's almost like having a seat at the table...at least it gets the conversation started.  The good people over at Perennial Plate know this and make it their business to bring people together while bringing attention to issues that concern us all. Each short film will showcase a family originally from Africa, Asia, Europe, Latin America or the Middle East. 

Francisco and Lucia are Guatemalan refugees who came to Colorado in the 80s, through farming with their community and growing certain plants indigenous to Guatemala, they are able to hold on to a piece of their home.

British retailer Co-op has starting to sell only British bacon and has thrown down a real challenge to other UK retailers to do the same.  That means that their almost 5,000 outlets have removed Danish bacon and New Zealand lamb making them the first supermarket chain to sell fresh meat exclusively from the UK. The National Farmers Union is pretty excited about it as one can imagine. (Munchies & Farming UK

Shop till you flop: Why can’t anyone make money in online grocery delivery? "Despite immense growth in demand in recent years, the online grocery business remains largely unprofitable. As an online grocery business grows, it can no longer rely on sending workers to local grocery outlets to fill orders. Instead, they must invest heavily in more intricate and more costly ordering and logistics systems in order to pick, pack and deliver the near-infinite combinations of items customers select."

Teff could be the next quinoa as Ethiopia boosts exports. Ethiopia’s staple grain is the latest superfood, but there are fears about impact of rising exports on local people who rely on it as their staple food. “What happened with quinoa will not happen with teff. We just won’t let it," said Khalid Bomba, the head of the Ethiopian Agricultural Transformation Agency (ATA). (Guardian)

Time for more product innovation. Sales of specialty meat and seafood are up, and Millennials are pushing the trend. "Specialty frozen and refrigerated meat, poultry, and seafood accounts for 10.5 percent of all meat, poultry, and seafood sales. The category hit $3.6 billion in 2015, jumping 23.1 percent since 2013." (Specialty Food)

Is whelk having a moment? When it got in front of our camera, we thought it was gorgeous. Tasted good too. ‘Ugly’ snails, once ignored by fishermen, now a prized catch "Some upscale New York City restaurants now feature fresh or even raw whelks on the menu. The old-school Italian restaurants that serve sea snail salad — a popular Christmastime dish — usually get it canned from a handful of specialty processors." (Seattle Times)

Pickled and Smoked: Reasons to Get Excited About the Good Food Awards New Preserved Fish Category "In the past years, smoked and pickled seafood had been a subcategory of Charcuterie. It now has its own, with subcategories for roe, rillettes/pates, salt preserved, water and oil packed, pickled, and of course, smoked....Along with sustainability, there’s the deliciousness factor. Imagine a mezze platter with preserved anchovy fillets, a hiking trip that includes rich smoked black cod rillettes, a simple winter evening meal of pickled herring in sour cream on rye. Figuring out how to get humans to do what's good for them can be a bit more muddled. "It’s nice to see Mark Rylance’s bottom. But our oceans deserve better" Getting celebs to take their kit off won’t change attitudes to overfishing. The public are intelligent beings, not morons who have to be bribed to pay attention. (Guardian)

Traceability in Seafood Chain About Money, Not Just Ethics Not much of a surprise. "But traceability also comes at a cost. Providing the story of the catch means disentangling the seafood supply chain, which involves communicating with harvesters, shippers, wholesalers and retailers on the chain of custody. Buyers might also require some kind of independent third-party certification program." (New York Times)

Rise of the Grocerant with more and more prepared foods sold at retail. And putting restaurant seating in and around retail isn't just for Eataly anymore. “Providing on-trend menus is only the beginning. More retailers are creating in-store areas with seating and table service like a traditional restaurant, if not operating full restaurants in, or adjacent to, their stores. Non-food retailers have proven the success of this model, Johnson notes: in-store foodservice at Nordstrom’s can rake in nearly $1 million in sales a year per unit, and Ikea’s casual dining operations do well over $2 million per store.” (Specialty Food)

Drought-Stricken California Farmers Look To Tap Urban Wastewater. California could be using two to three times more wastwater. However, "It's not the single silver bullet solution for agriculture. Agriculture is going to have to do a lot of things to adapt to a future of less water availability." (NPR)

Organic farms don't have the tiny carbon footprint they like to tout. But they could. "If you look at the USDA standards for organically produced goods, you will find that the soil management practices necessary to promote carbon sequestration are encouraged, but not required. Instead, the USDA uses its seal to create a ceiling and a floor for organic practices, allowing organic to be a profitable industry. It no longer matters, at least within conventional grocery markets, if one farmer’s organic standards result in higher green house gas emissions than another because, in the eyes of the consumer at, say, Whole Foods, they are the same. But the Earth’s climate will definitely know the difference." (Guardian)

Can Craft Beer Truly Express a Sense of Place? Many of the ingredients used in craft beer are produced at an industrial scale and traded as commodities, but "there are a number of experimental breweries that are gathering yeast from their region and isolating it for the purpose of creating beer that better reflects its place." The drive-thru grocery store is happening, thanks to Amazon. "The e-commerce giant is developing a new drive-up store concept in Silicon Valley that will allow consumers to order grocery items online, then schedule a pickup at a dedicated facility, according to industry sources familiar with Amazon’s plans. If confirmed, the project could signal a new distribution strategy for Amazon, the world’s biggest online retailer, while adding an additional threat to a grocery industry already in the throes of change." Targeting Retail and the Fancy Food Show

this piece was originally published January 20 in Seedstock, the blog for sustainable agriculture focusing on startups, entrepreneurship, technology, urban agriculture, news and research.

Every year thousands of new and established producers looking for a slice of the American retail market throw down some big bucks in summer or winter and exhibit at the NASFT Fancy Food Show, which ran this past week in San Francisco.

Because of the costs of participation (booths start at $3,440, plus transportation to the show, materials, signage, staffing and samples) it skews towards large producers. As a small, farm-based producer, it would be very difficult to recoup your costs. And when you participate in a show, you join the market noise. Getting a shop onboard with your authentic product and story is better done one-on-one. 

You can talk to the retail buyers that are right for you without meeting them at a show. A little detective work can yield a better, more targeted list. Here’s how.

  • Go to the web sites of other products you admire, and that are of comparable price and quality, and check out their “where to buy” section.  That’s your starter list.
  • Look at the Edible Communities advertisers. You can find them in your local print edition or on the web sites of other regional editions. The shops that advertise here are often the kinds of shops that are looking for farm-sourced, artisan products.
  • Keep a running list of what shops are getting written about in food magazines, newspaper food sections and top blogs, likes Tasting Table and Eater. Because keeping up with this information can get overwhelming, set up a custom RSS feed reader that let’s you quickly scan headlines and organize by regions and types. (We use Netvibes, and it’s free.)
  • If your product has seasonal appeal, start way in advance. If holiday sales are what you want, start reaching out in early May. Depending on the size of the shop, they may tell you to try back in a few months, but then you’ll know their schedule and you’ll have the correct contact information in hand.

While exhibiting at the show isn’t a good value for small producers, it’s still a good place to watch for trends and newcomers. We walked every aisle looking for glimmers of authenticity, so you didn’t have to.  Below are a few of our finds.

American artisan cheese was well represented with familiar names like Coach Farm, Vermont Butter & Cheese Creamery, and Cypress Grove Cheve in attendance. The best story here is that great American cheese-making is no longer novel, even at a mainstream show like this one.

The bulk of the show is long-shelf-life packaged goods. A few years ago, you couldn’t turn around without hearing about a new pickle company, but this year the field was spare. There were a few good examples of preserves from both east and west, however. Oregon Growers and Shippers has developed into a really impressive line of jams, butter, honeys and fruit pates that bring together the bounty of the Hood River Valley and surroundings in flavor combinations that give a sense of place, like cherry zinfandel and pear hazelnut. They’re a good example of an artisan and farmers partnership, and they market their farm-sourced story well.  As an endorsement  in their materials from a local orchardist explains: “Their success is our success.” Amen to that.

With a bent towards savory cheese pairings, Virginia Chutney Co. took the time to discuss with us  the difficulties of consistently sourcing locally from small growers. Their berries come from the west coast, but they get the tomatoes for their green tomato chutney from a local farm. Their attempts to use local peaches were thwarted by the extra labor of not being able to get freestones one time, and the bears who ate the best of the crop another. (If you’re in their area with local produce to sell, why not give them a call.)

Candy, cookies and other sweets were a big part of the show, and most on offer were cheap, industrial versions of familiar items. That made goat milk caramel from Fat Toad Farm in Vermont even more delightful. In addition to fresh cheese, they turn milk from their 64-head goat herd into jarred caramel sauces, both unexpected and delicious. Their packaging isn’t flashy but shows how a few thoughtful details can create a distinct look without breaking the bank. Their logo, an image of a fat toad that looks like a children’s book illustration, and touches like burlap gift bags printed with a line drawing of a jar, feel whimsical and farm-inspired without being folksy.

Well-warn paths aren’t the only way to go. Sometimes it pays to be a pioneer. We wrote about Bourbon Barrel Foods in the context of building American regional food identities, and they were at the show in a category all their own with their Kentucky soy sauce.

The most exciting thing that we’d love to see more of is high-end vinegar. A lone example at the show was Gingras, an aged cider vinegar from Quebec. They don’t call out their farm connections nearly as much as they could, but Gingras is made from apples grown in their own orchards and aged in French oak barrels to develop the flavor. We’ve seen fruit vinegars on cocktail menus in Japan, and Gingras was sampling a rum-based cocktail during the show.

Chefs know the value of specialty vinegars in cooking, and this is a trend that could spill over more to home kitchens. Mixologists are also getting media coverage and shaping trends of their own. Across the country, the shelves of specialty food stores are stocked with European and Asian products with very little from the US. For a producer, it’s a higher value product than juice without all the regulation hassle of alcohol. And its appearance on cocktail menus opens up branding possibilities and name recognition for producers. If you’ve got a pioneering spirit and excess produce, it’s time to start experimenting.  Let authenticity and clear flavors (not quirkiness for its own sake) be your guide.
